But tonight, at Nacho’s Mexican Food Truck in Huntsville, Alabama, I was handed something that stopped me cold. I’m not sure it was on the menu, but if an owner of a food truck ever offers you something and you don’t know what it is, don’t ask… Just take it and experience the goodness that eating food that she wanted you to have will be. Perfectly seasoned chicken over arroz rojo that any serious cook would be proud of — brilliant orange, every grain alive with tomato, cumin, and garlic — finished with a hand-crafted queso blanco that had genuine soul behind it. This is the food that doesn’t make the menu because it lives in the hands of the cook. You only get it when someone decides you’re worth the extra effort. She decided that tonight. I stopped by Nachos Mexican Food Truck parked by the Chevron at MidCity in Huntsville, and this is exactly how a food truck should operate. I walked up and ordered three birria street tacos. The owner told me it would be about five minutes, and sure enough — by the time I finished pumping gas, my order was already hot, packed, and ready to go. Total cost: $11, which honestly feels like a steal for the quality. The tacos were extremely flavorful — rich, savory birria with that deep, slow-cooked taste — and the packaging was clearly thought through. Everything was secure and travel-friendly, which matters when most customers are grabbing food and heading back to their car or down the road. The setup around the truck adds a lot of personality. There’s a large chair painted in the green, white, and red of the Mexican flag, along with four to five picnic tables painted to match. It turns a gas station stop into a place you actually want to hang out for a few minutes. I took multiple photos of the truck and the surrounding area because it’s clear this spot understands presentation and execution. Fast service, fair pricing, and food that delivers without cutting corners. This is one of those places you stop at once and immediately think, “Yeah, I’ll be back.”
